The holiday season brings joy, laughter, and an abundance of delicious goodies. And we cannot miss the Plum cake for Christmas. Plum cake stands out with its unique flavours and soft texture. Unfortunately, many traditional recipes are high in sugar and refined ingredients, which can make them less appealing to health-conscious individuals. So, here is a delightful variation of plum cake that uses healthier alternatives, including oats, olive oil, and jaggery. Get ready to enjoy a yummy treat that doesn’t skimp on taste!
Oats are an amazing source of fibre. Studies show that a diet rich in oats can lead to a 30% improvement in digestive health and help keep blood sugar levels steady. They are packed with important nutrients, making them a fantastic base for this cake.
Olive oil is celebrated for its heart-friendly fats. Research indicates that olive oil can reduce bad cholesterol levels by up to 10%. Its flavour adds a unique richness to baked goods, enhancing overall taste.
Jaggery is a natural alternative to refined sugar. It offers a more complex flavour profile and includes essential nutrients like iron, calcium, and various vitamins. Compared to white sugar, jaggery retains about 90% of the minerals, making it a healthier choice for those looking for a sweetener. You can substitute jaggery with dates.
Ingredients
1 cup oats
2 tbsp whole-wheat flour
1/2 cup jaggery, grated
4 Tbsp thick curd
2 Tbsp olive oil
100 ml orange juice
1 cup mixed dried fruits (such as dates, figs, and raisins)
1/2 cup walnuts or almonds, roughly chopped
1/2 tsp baking soda
1 tsp baking powder
1 tsp cocoa powder
1 tsp cinnamon powder
A pinch of salt
1 cup milk (dairy or plant-based)
Preparing the Cake Mix
Chp the dry fruits and nuts. Soak them in the orange juice for about 2 hours.
Next, blend the oats and whole wheat flour in a food processor until they resemble flour.
In a large bowl, mix the oat-wheat flour, baking soda, baking powder, cinnamon, cocoa powder, and salt.
Start by preheating your oven to 350°F (175°C) and greasing a cake pan.
In another bowl, whisk the olive oil, curd and jaggery together until combined.
Slowly pour the wet mixture into the dry ingredients, stirring until you form a smooth batter.
Lastly, fold in the mixed dried fruits and nuts.
Add milk as required to make the batter consistency smooth to be able to pour into a baking dish.
Pour the batter into a greased baking pan. Top the batter with more soaked dry fruits.
Bake the cake for about 30-35 minutes. You’ll know it’s ready when a toothpick inserted into the centre comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
